Can this Printer work with Linux?

The ENVY 6000 series, which includes this model, does support Linux. You have to download the HPLIP (HP Linux Imaging and Printing) for the compatibility as it does not work through the standard drivers. That does work with all of the current InkJet and Smart Tank models in case you mostly worried about finding one that supports Linux and had not yet considered the printer features.

Thank you for your question! The HP ENVY 6055e can be set to grayscale for black printing only in the settings. Also, this can be used with a single cartridge. It is highly recommended to have both cartridges in the printer at all times, however. For best results for black printing, a black laser printer is recommended.
